BAKED BUFFALO CHICKEN WINGS

What you need:

  • 2 pounds chicken wings
  • 1 1/2 teaspoons canola oil
  • 1 teaspoon baking powder
  • 3 tablespoons Buffalo-style hot sauce
  • 2 tablespoons unsalted butter
  • 1 tablespoon honey
  • 2 teaspoons cider vinegar
  • Blue cheese or ranch dressing

How to make it:

  • Preheat your oven to 400°F. Line a large rimmed baking sheet with foil. Put a wire rack on the baking sheet; coat with cooking spray. Pat wings dry and put in a medium bowl. Add oil and baking powder; toss to coat well. Arrange the wings in an even layer on the prepared rack. Bake until the skin is crispy and the chicken is thoroughly cooked, it should take about 45 to 50 minutes.
  • In the meantime, mix hot sauce, butter and honey in a saucepan; bring to a simmer over medium heat. Let it cook whilst swirling occasionally until slightly reduced, which should take around 5 minutes. Once cooked, remove from heat and stir in vinegar.
  • Place the wings into a large bowl. Add the Buffalo sauce; toss until evenly coated. Transfer all of it into a platter. Serve with dressing, carrots and celery if you'd like. And voila, your chicken wings are ready.

 


SRIRACHA-BUFFALO CAULIFLOWER BITES

Preparation: 10 mins

What you need:

  • 8 cups 1 or 1/2-inch cauliflower chunks
  • 2 tablespoons extra-virgin olive oil
  • ¼ teaspoon kosher salt
  • 2 tablespoons hot sauce
  • 1 or 2 tablespoons Sriracha
  • 1 tablespoon melted butter
  • 1 tablespoon lemon juice

How to make it:

  • Preheat oven to 450°F. Coat a large rimmed baking sheet with cooking spray.
  • Add cauliflower, oil and salt in a bowl. Place on the prepared baking sheet and reserve the bowl. Roast the cauliflower until it's starting to soften and turn brown on the bottom for about 15 minutes.
  • In the meantime, add Sriracha, melted butter and lemon juice in the bowl. Add the roasted cauliflower and toss to coat. Place the cauliflower back on the baking sheet and continue roasting until hot for just about 5 additional minutes.
  • Our tip is to serve them with carrots or celery. You can also add your favorite ranch or blue cheese dressing for more flavors.

  


BLACK BEAN TACOS

What you need:

  • 2 cans rinsed black beans
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • 8 hard taco shells
  • ¾ cup shredded Mexican cheese blend

How to make it:

  • Preheat oven to 325°F.
  • Mash half of the beans in a bowl. Add whole beans, cumin and garlic powder; stir to combine. Fill each taco shell with about 1/3 cup of this mixture. Add cheese on top. Put the filled tacos on a baking sheet and cook until the beans are hot and the cheese is melted for about 12 to 15 minutes.
  • Room for more? You can double the ingredients so it serves up to 8 people.

 

JALAPENO POPPERS

Preparation: 5 mins

What you need:

  • 4 jalapeños (halved lengthwise & seeded)
  • 6 tablespoons fat free cream cheese
  • 1 clove minced garlic
  • Salt
  • 3 tablespoons panko breadcrumbs

How to make it:

  • Put jalapeño halves cut side down on a foil-covered baking sheet and broil for 2 minutes until just beginning to roast.
  • Meanwhile, mix cream cheese, cottage cheese, garlic, and salt in a bowl.
  • Turn the jalapeños over and fill them with the cheese mixture. The cheese will bubble while baking so make sure you don't add too much.
  • Sprinkle panko on top of each jalapeño half and cook on the bottom rack under the broiler for just a few minutes until the panko is golden brown and the cheese is bubbling.


 

BAKED SWEET POTATO SKINS

What you need:

  • 3 sweet potatoes
  • 1 tablespoon olive oil
  • ¼ teaspoon hot chili powder
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • Salt
  • 1 spicy chorizo
  • 2 cups grated cheese
  • ¼ cup chopped green onions
  • Green salsa

How to make it: 

  • Preheat the oven to 450°F. Prick sweet potatoes several times with a fork and put onto a baking sheet.
  • Cook the potatoes in the oven until they are easily pierced with a fork for 50 minutes to 1 hour. Remove from oven and leave oven on. Let the potatoes cool down for 10 minutes.
  • Once cold, cut the sweet potatoes lengthwise and scoop out the middle until 1/4-inch of potato skin is left.
  • Mix olive oil, hot chili powder, paprika, garlic powder, pepper, and salt in a bowl. Cover all sides of sweet potatoes with the mixture.
  • Cook in the hot oven until it becomes crispy for about 15 minutes, turning as often as necessary.
  • Heat a large skillet over medium-high heat. Cook and stir chorizo in the hot skillet until browned and crumbly for about 5 to 7 minutes. Place chorizo to a paper towel-lined plate to drain.
  • Mix cheese and green onions together in a bowl and put mixture into the wells of the sweet potato skins. Add chorizo bits on top.
  • Cook in the oven until cheese is melted and golden brown for about 5 minutes. Serve warm with green salsa for dipping. And just like that, that's your Super Bowl snacks sorted out.
